“It’s truly incredible,” expressed Executive Chef Yuki Anai, emphasizing that their longstanding aspiration has always been to attain the coveted Michelin star. “We remain committed to putting in our utmost effort and continuing to strive for excellence,” she added.

This restaurant, with an additional location in Montreal, unveiled its Yaletown branch just a little over a year ago. At this establishment, they offer an omakase-style dining experience, where the chef curates the meal for each guest.

The Michelin guide aptly described the dining experience at this restaurant as “a memorable show from start to finish,” highlighting their dedication to serving high-quality seasonal fish with meticulous attention to detail.

With this latest addition, Vancouver’s Michelin guide now boasts a grand total of 77 distinguished establishments.

In a culinary expansion, Michelin has welcomed five new Bib Gourmand restaurants into its Vancouver guide, spotlighting exceptional dining experiences at more affordable price points. This eclectic list now features a total of 17 restaurants.

The fresh additions to the Bib Gourmand category are:

  1. Farmer’s Apprentice
  2. Karma Indian Bistro
  3. Motonobu Udon
  4. Seaport City Seafood
  5. Sushi Hil

Furthermore, a dozen new establishments have earned recommendations from Michelin:

  1. Archer
  2. Bao Bei

  4. Elisa
  5. Folke
  6. Hānai
  7. Moltaqa
  8. Regal Mansion Cuisine
  9. Sushi Jin
  10. Suyo
  11. Tetsu Sushi Bar
  12. Wildlight Kitchen + Bar

It’s worth noting that Michelin initiated its star rating system in Canada last year, launching guides in both Toronto and Vancouver. This year, two more restaurants in Toronto have been awarded Michelin stars, bringing the city’s total to 15.

Anonymous Michelin inspectors meticulously evaluate restaurants during several weeks of visits, scrutinizing various facets. Their reviews are grounded in five key criteria: the quality of ingredients, the balance of flavors, the mastery of cooking techniques, the chef’s personality expressed in the cuisine, and consistency, with each restaurant being inspected multiple times throughout the year.
